Welcome spring with this scrumptious, EASY Asparagus Risotto! With contemporary chives, contemporary lemon zest, parmesan cheese, tender asparagus, and edible flowers, that is the right spring dish.
Iām formally in my risotto period. I lastly cracked the code so buckle up for a plethora of risotto recipes. It is a twist on my authentic Lobster Risotto. I did use a second pan to ensure I cooked the asparagus precisely to my liking. I didnāt need it to get mushy whereas I used to be ending the asparagus.
Don’t, I repeat, don’t use a pan with tall sides. Use a big, flat skillet to make risotto. It makes the method a breeze, permitting the rice to rapidly take up the liquid. Youāll thank me later!

Asparagus Risotto
4 cups vegetable broth
3 Tbsp butter
2 shallots, finely chopped
4 cloves garlic, minced
1 cup Arborio rice
1 Tbsp olive oil
1 bunch contemporary asparagus, minimize into items
1/2 cup grated Parmesan cheese
1 lemon
Salt, pepper to style
1 Tbsp contemporary chives
Serving suggestion: lemon wedges, contemporary herbs, edible flowers
- Heat vegetable broth in a medium saucepan and maintain heat whilst you make the risotto.
- In a big skillet, soften 3 Tbsp butter over medium warmth. Add the shallots and sautƩ till translucent, about 3 minutes. Add the garlic and prepare dinner till aromatic, 1-2 minutes.
- Add the Arborio rice to the pot, stirring till frivolously toasted, about 2-3 minutes.
- Slowly add one cup of heat broth to the rice. Stir till a lot of the liquid is absorbed. Add the broth one ladle at a time, stirring till every ladle is absorbed. This could take about 20 minutes over medium warmth.
- In the meantime, warmth 1 Tbsp olive oil in a medium skillet. Add asparagus and prepare dinner over medium low warmth till cooked to your liking, about 5-10 minutes. Season asparagus with salt and pepper.
- When risotto has absorbed all the liquid and is cooked al dente, stir within the asparagus, parmesan cheese, and contemporary chives. Zest half a lemon and add the juice of half a lemon, reserving the extra lemon zest and lemon half for serving.
